Smoky Green Chile Ranch Dressing:


1 cup low-carb ranch dressing (recommended: no more than 1 carb per 2 tablespoons)


1 (4-ounce) can diced green chiles, drained


2 teaspoons chipotle pepper sauce (recommended: Tabasco)


1 teaspoon finely chopped cilantro leaves


1 clove garlic, minced


Whisk all the ingredients together in a bowl. Refrigerate until needed








BLUE CHEESE DRESSING


1/2 pound blue cheese, crumbled


1 cup sour cream


2 tablespoons chopped fresh chives


1 lemon, juiced


: Put the blue cheese and sour cream in a bowl, mashing with a fork to combine. Add the chives, lemon juice, and a few turns of freshly ground black pepper; mix to incorporate, leaving a few chunks of cheese in the dressing. Thin out the dressing with a tablespoon of water, if you wish, to smooth out the consistency.








Ceasar


6 cloves garlic, mashed and minced


1 tablespoon Dijon mustard


1 tablespoon Vinegar


2 tablespoons mayonnaise


1/2 cup olive oil


Salt


Pepper


Lemon juice


Minced anchovy fillets (optional





Combine garlic, mustard, vinegar and two pinches of salt in a blender and mix thoroughly. Add mayonnaise and blend together to form a thick base. In a slow stream add olive oil through hole in lid. Scrape dressing with spatula into a bowl and season to taste with salt, pepper and lemon juice. If desired, add anchovy to dressing to create a deeper, saltier taste.








Blueberry Balsamic Vinegar





4 cups frozen, thawed or fresh blueberries


1 quart balsamic vinegar


1/4 cup sugar


Lime peel cut in strips from 1 lime (green part only)


1 (3-inch) cinnamon stick





In a large non-reactive saucepan, crush blueberries with a potato masher or back of a heavy spoon. Add vinegar, sugar, lime and cinnamon and bring to a boil. Reduce heat and simmer, covered, for 20 minutes. Cool slightly and pour into a large bowl. Cover and refrigerate for 2 days to allow flavors to blend.


Place a wire mesh strainer over a large bowl. In batches, ladle blueberry mixture into strainer, pressing out as much liquid as possible. Discard solids.





Pour vinegar into clean glass bottles or jars, and refrigerate, tightly covered, indefinitely. Use in salad dressings or drizzled over chicken or beefI am looking for salad dressing recipes such as balsamic and olive oil and blue cheese dressing.?

CARIBBEAN SALAD DRESSING





1 12 oz can pineapple juice


4 tablespoons sesame seed oil


2 tablespoons apple cider vinegar


2 tablespoons fresh parsley (or 1 tablespoon dried)


1/2 teaspoon rosemary


1/2 teaspoon lemon pepper


1/8 teaspoon salt





Mix all ingredients in an airtight container with lid. Shake vigorously for 30 seconds. No refrigeration necessary. Must be mixed well each time served, as the ingredients separate with the oils.


Yields 1 1/2 cups.








CAESAR SALAD DRESSING





1 cup mayonnaise


1 tbsp lemon juice


1 tsp Worcestershire


1 clove of garlic (minced)


1/4 tsp salt


1/8 tsp pepper


1/2 c Parmesean cheese


1 tbsp of milk or half and half





Mix all ingredients together and shake or whisk until well blended.





OLIVE GARDEN ITALIAN SALAD DRESSING





1/2 cup white or red wine vinegar


1/3 cup water


1/3 cup vegetable oil or olive oil


1/4 cup light corn syrup


2 1/2 tablespoons grated Romano cheese


2 tablespoons dry pectin (used to thicken jelly)


2 tablespoons beaten egg or egg substitue


1 1/4 tsp. salt


1 tsp. lemon juice


1/2 teaspoons minced fresh garlic or 1 tsp. garlic powder


1/4 teaspoons dried parsley flakes


pinch of oregano


pinch of crushed red pepper flakes, or to taste





Combine all of the ingredients with a mixer on medium speed for 30 seconds -Or- in a blender on low speed for 30 seconds -Or- use a wand mixer on low speed for 30 seconds. Chill at least 1 hour.


Serve over mixed greens or use as a marinade. I like to add the hot peppers in the salad that the restaurant uses. It tastes closer to the original that way.








BLEU CHEESE DRESSING





1 (4 oz.) Bleu Cheese, crumbled


1 c. sour cream


1/2 env. cheese garlic dressing or to taste


1/4 c. milk


1 tbsp. vegetable oil


1 tbsp. lemon juice





Mix all ingredients well. Chill
