How do I make Egg Salad? & Some good recipes?

8 eggs


1 tablespoon mayonnaise


2 tablespoons prepared Dijon-style mustard


1 teaspoon dried dill weed


1 teaspoon paprika


1/2 red onion, minced


salt and pepper to taste


Sometimes I will add a little pickle relish also





DIRECTIONS


Place eggs in a saucepan and cover with cold water. Bring water to a boil; cover, remove from heat, and let eggs stand in hot water for 10 to 12 minutes. Remove from hot water, cool, peel and chop.


In a large bowl, combine the egg, mayonnaise, mustard, dill, paprika, onion and salt and pepper. Mash well with a fork or wooden spoon.


Serve on bread as a sandwich or over crisp lettuce as a salad.














FANCY EGG SALAD





4 hard-cooked eggs, peeled


1 tablespoon Italian parsley, finely chopped


1 tablespoon capers, dried, finely chopped


1 large shallot, peeled, finely chopped


1 slice of bacon, crisp, finely chopped


1 1/2 tablespoons mayonnaise


Salt and pepper





Method


1. Put the eggs into a gently boiling pot of water and cook for 30 minutes. Cool with water, peel, and chop. (A food processor can be used although I prefer the therapy of hand chopping.)


2. Toss the eggs in a bowl with the parsley, capers, shallots, and bacon. Season with salt and pepper to taste, then add the mayo and mix well. Serve with fresh bread, crackers, on hearts of romaine, or in a salad.





Variations

Plain egg salad is made by boiling eggs. How many you boil depends on how much you want to make. After boiling the eggs, you peel the shell off. Sometimes it is easier to do when you run cool water over the eggs, esp since they just came out of boiling water. Then, put your eggs in a container and mash them up pretty well. Mix in mayo. It can be as much or as little as you like depending on whether you want your egg salad to have more of a solid or liquid consistency. Then, add a little salt and pepper for taste. Cajun Egg Salad


boil eggs, cool, peel, and chop


put in a big bowl and add mayonaisse, cajun seasoning, jalepeno relish and crisp bacon.


stir it all together





For regular, use pickle relish instead of jalepeno, salt/pepper instead of cajun, and leave out the bacon.
I take about 4 boiled eggs and dice them using an egg slider that you can get at any store like Wal Mart. First slice it horizontally and then vertically, so you have nice diced pieces. Then, add about 1/4 cup thinly chopped celery and onion ( if you like onions). Than add some mayo, a dab of mustard, salt, pepper and a little bit of dill weed. I think you will like this.
Mash two hard boiled eggs up in a bowl.


Add some quaker oatmeal and a little bit of brown sugar.


Cut up some salad. then pour 1 1/2 cup of balsmaiac vinegar on the


salad. Prepare a cantoloupe and cut thin wegdes into the mixture.





Dump mixture in garbage.

when it reaches a steady boil, cover and turn off heat.


10 min later rinse under cold water.


peel, rinse and quarter.


place in bowl, with a sharp knife turn bowl and chop.


Add mayo and mustard.


Wa-la egg salad.
i like it very simple:


chopped hard boilded eggs.


mayo


chopped green onion


garlic powder


lots of black pepper.


add as much of each as you like.


i like to have it on a whole grain wheat bread with lettuce.


sounds yummy. i might make that for lunch!
I like adding curry powder and raisins to my egg salad.
