Any nice cold salad recipes??

like ambrosia, waldorf salad type recipes. kids and i live in south texas where it get as high as 100 degrees in the summer. we also get easily bored with sandwiches. thanks!Any nice cold salad recipes??
Try mixing cooked and drained elbow macaroni with either mayo, miracle whip or a combo of both (use can use the light versions) and add chopped up fresh veggies that you love. You can also add cubed cheese (any kind you like) and ham or diced chicken or whatever. Mix well and keep in the fridge. I just made a big tub of just the pasta mixed with the dressing and cheese and when someone wanted some they added whatever they wanted to it when they ate it.Any nice cold salad recipes??
i think the best salad ever is


陆 cup of sour cream,


陆 cup of mayo


2 cups of cooked pasta


1 grated carrot


Half a lettuce (cut/shredded)


1 tomato diced


陆 cup of diced cucumber


1 teaspoon of garlic


300gm can of corn (drained)


I capsicum





All you need to do is mix and serve!!!


It Is soooo yummy and it tastes really food if you add chicken to it!
My family LOVES this recipe. It's easy, fresh, cool, and delicious on a hot summer day. (I'm in Sacramento, so we get our share of 100+ degree weather, too!)





Mandarin Salad





录 cup vegetable oil


2 Tablespoons vinegar


2 Tablespoons sugar


陆 teaspoon salt, dash pepper


1 Tablespoon snipped parsley





陆 head each romaine and iceberg lettuce


2 medium stalks of celery (1 cup)


11-ounce can drained mandarin oranges





录 Cup sliced almonds


2 Tablespoons sugar





Prepare dressing by combining first five ingredients in a tupperware bowl. Shake, and refrigerate at least an hour.





In a frying pan, cook almonds and sugar (nothing else) over low heat, stirring constantly until sugar is melted and almonds are coated. Cool on wax paper %26amp; break pieces apart.





Tear lettuce into pieces and place in bowl with onion and celery. Pour dressing over lettuce. Add oranges and almonds and toss. Serves 4
go to the kraft food website they have a salad called pizza pasta salad. It is really good and addicting very easy to make it is penne noodles mozzerella cheese parm cheese pepperoni basil and roasted red pepper italien parm dressing. they also have a lot of other salad recipes for you to try
I have this really good broccoli salad that I like.I'm not sure if your kids like veggies-but here goes:





1 head of fresh broccoli(take of stem %26amp; use other pieces)


1 bag of shredded chedder cheese(or shredded pizza cheese-your choice)


A few tablespoons of Miracle Whip or Mayo(Miracle Whip has that zip-that's what I use)





Mix in large bowl.Refridgerate.Serve cold.Serves a lot.Depending on how much you put on your plate or bowl.

1 pkg bagged Cole Slaw mix


onion--however much you want (you can leave it out too)


2 pkg Any Flavor Ramen Noodles


Break Up Noodles 鈥?Do Not Cook 鈥?Do Not Use Flavor Packet


1 cup Salted Sunflower Seeds


1 cup Toasted Slivered Almonds (you can leave these out too)





Dressing (Add to Salad When You Serve It)


戮 Cup Extra Virgin Olive Oil


录 Cup White Wine Vinegar


陆 Cup Sugar


2 Spice Packets From Ramen Noodles





You dont really need to make it much before serving, it needs to be refridgerated, but the longer it sits, the noodles will become soggy, but it is still really good.
I got the original recipe from Food TV but made some changes for my own liking (more veggies)





1 pound medium sized macaroni


1/2 cup Pesto, recipe follows


1/2 pint cherry tomatoes, halved


1/4 cup of frozen peas


1/4 cup of chopped sweet red pepper


1 cup crumbled feta cheese


3 tablespoons of capers





Kosher salt and freshly ground black pepper


Olive oil, as needed





Bring a large pot of salted water to boil. Stir in the bow ties and cook, stirring occasionally, until al dente, about 10 minutes. Drain the pasta and run it under cold water just until it stops steaming. Bounce the pasta around to get rid of as much water as you can.


Dump the pasta into a large serving bowl. Stir in the pesto until the pasta is coated. Toss in the cherry tomatoes, capers, frozen peas, red pepper and the crumbled feta. Taste the salad and season it as you like with salt and pepper.


You can make the salad up to about 1 hour before you serve it. Check out the salt and pepper just before you serve the salad. If it's looking a little dry, add some olive oil and stir it around.


Pesto:


5 big handfuls basil leaves (about 2 hefty bunches)


3/4 cup walnuts


1/2 cup fresh grated Parmesan or Pecorino cheese


Juice of 1 small lemon


2 cloves garlic, peeled


Kosher salt


About 20 grinds freshly ground black pepper


3/4 cup extra-virgin olive oil


Place all ingredients with 1/2 cup of the oil in a blender and blend. Gradually drizzle in the remaining 1/4 cup of oil until pesto is thick and smooth.


Yield: about 1 1/2 cups
This is a wonderful cold salad and is easy to prepare.


2 boxes of lime Jello


2 cups boiling water


2 cups ice cold water*


1 can (15 oz.) pineapple chunks, drained, (save the juice).


1 cup walnuts, chopped, or pieces.


1/2 cup mayonnaise


1 cup cottage cheese (small curd)


1/2 cup diced celery


*pineapple juice plus enough ice cold water to make another cup.


Make Jello according to package directions, (for the second cup of ice cold water use the pineapple/water mixture). Allow to set partially. Mix walnuts, celery, cottage cheese, and mayonnaise together well, and add to the partially set Jello, stir to mix thoroughly, and allow to set completely. Wonderful with barbeque, or even HotDogs and Chips!
I LOVE Broccoli Salad!! you take 5-6 cups fresh broccoli florets , about 1/2 cup cooked bacon, 1/4 cup diced red onion. and a jar of marzetti slaw dressing. Cook the Broccoli for about 5 to six minutes less if you like it crunchy. mix all ingredients and refrigerate till nice and chilled. I hope this helps it is one of my FAVES!!
I LOVE a curried tuna waldorf salad, which can be eaten plain, wrapped in lettuce leaves, or eaten on crackers.





Mix:


Tuna


Mayonnaise


Curry Powder


Apples


Raisins





(If you want to keep it light, this is an excellent recipe for fat free mayo, which normally tastes pretty bad. However, the curry covers up the fat-free mayo aftertaste).

Waldorf Salad


* 2 medium red apples, cored and diced (about 2 cups diced)


* 1 cup chopped celery


* 1/2 cup coarsely chopped walnuts


* 1/4 teaspoon salt


* 1/4 cup mayonnaise





Combine apples, celery, and walnuts; sprinkle with salt. Add mayonnaise and toss to coat all ingredients. Chill until ready to serve. Serve Waldorf Salad on lettuce or mixed salad greens.


Waldorf Salad serves 4.
get pre sliced chicken, tortilla chip strips, cherry tomatoes, yellow and red bellpeppers, and chipotle ranch dressing. I reccomend triple heart lettuce packages. :)
This is my version of ambrosia. My family is not too crazy about fruit cocktail, so mine is simple.





4-5 small cans of mandarin oranges, drain all the cans except one


1 bag of mini marshmellows


1 small container of sourcream





Mix all ingredients and place in bowl, cover and store in refrigerator for at least one hour. The longer the better. Believe it or not this is a sweet tasting dish, i guess its because of the marshmellows.
