Has anyone got any really tasty recipes for pasta salad?

I dont want anything to oily or vinigery but i have been fancying pasta salad for about a week now (im pregnant lol) and cant think of what to have, something nice and easy to make would be good!

Pregnancy does give you specific cravings, doesn't it? I always wanted a pizza with tandoori chicken and many a times I wanted grilled tomato and cheese sandwich.

This is my own super secret pasta salad recipe.....or at least it was super secret. Easy and fantastic.





Ingredients:


1/2 box wheat pasta (penne or fusilli)


1 red pepper, diced


1 onion, diced


6 mushrooms, sliced


sliced black olives


1 cup mayo


2 tsp pesto


1 TBS balsamic vinegar


garlic


butter


olive oil


grated parmesan





Optional:


2 boneless skinless chicken breasts, cut into small cubes


italian seasoning








Directions:


Cook pasta. Once cooked, run cold water over it until cooled completely.





While pasta is cooking, cook pepper and onion in some light olive oil until softened. Put aside in a bowl to cool. Saute mushrooms in some butter and garlic. Add to the same bowl as the pepper and onion and continue cooling.





In a small bowl, mix together mayo, pesto and balsamic vinegar. Adjust the amounts of the three items to your taste. I have no idea what the true measurements I used were because I would add more pesto, then more balsamic, then more mayo and keep adding until I achieved nirvana. Some advice: after everything has mellowed in the fridge, you'll tend to wish you put more balsamic, but be careful of course.





Once all the cooked veggies are cooled (you may need to expedite this with the freezer if you want to eat the salad today), combine with the pasta, mayo mix, and olives. Olives are a personal thing, so you can use as many as you want, but I used about 3 tablespoons.





If you want to make a carnivorous version of the salad, cook the chicken in some light olive oil and a liberal amount of italian seasoning. Cool, and mix this in too.





Serve with a sprinkling of parmesan on top.
Pasta Salad with Sweet Peppers and Dill


Ingredients


8 ounces flat egg noodles or fusilli


4 ounces mange-touts peas or green beans


1/2 cauliflower, in small pieces


6 ounces carrots, thinly sliced


2 red sweet peppers, chopped or yellow sweet pepper or green sweet pepper, chopped


2 spring onions, chopped


4 tablespoons fresh dill, chopped


Dressing


2 cloves garlic, chopped


5 tablespoons red wine vinegar


1 tablespoon granulated sugar


5 tablespoons corn oil


3 tablespoons water


salt %26amp; pepper, freshly ground


Directions


In large saucepan of boiling water, cook pasta until al dente (tender but firm-start tasting 2 minutes for fresh pasta, 5 minutes for dry); drain, rinse under cold running water and drain again.


Blanch mangetout or green beans in boiling water for 2 minutes.


Drain; rinse under cold running water and drain again.


Cut diagonally into 2 inch/5 cm lengths.


In large bowl, combine cauliflower, carrots, peppers, spring onions, dill, mangetout and pasta; toss to mix.


Dressing: in food processor or bowl, combine garlic, vinegar and sugar; mix well.


While whistling or processing, gradually add oil and water; mix well.


Pour over salad and toss to mix.


Add salt and pepper to taste.
On Saturdays I like to make light, healthy food for my family and last Saturday, I made some fresh Salmon in garlic sauce and some tri-colored pasta, broccoli and mixed it all together...........my kids and hubby has been asking for some more ever since...........it's tasty, healthy, quick, inexpensive, creative and will keep you wanting more.....

I don't know if it's any good though. But it's easy!
my sisters just use a box of those noodles that are different colors and they pour that oily looking salad dressing on it. for some reason they love that stuff lol
