My husband is trying to shed a few pounds and we both want to start having salads with most of our meals. I have plenty of different types of Kraft salad dressings, but I would love your input on types of salad recipes I could make??What are some great green salad recipes??

1 bag baby mixed greens
1 small can (drained) mandarin oranges
chopped walnuts
diced cooked chicken breast
crumbled Gorgonzola or other blue cheese
Top with raspberry vinaigrette
FRENCH GREEN SALAD
Crisp lettuce
Spinach leaves
Water cress
Green celery slices
Cucumber slices
Chopped green onions
Clear French dressing
Rub salad bowl with peeled garlic clove. Break equal parts of each chilled green into bowl. Add cucumber and onion. Chill. Just before serving, pour French dressing over. Sprinkle with salt and pepper. Toss lightly until leaves are coated. Garnish with tomato and radish slices.
Do you have fat free dressing? The fat in most dressings is mind-blowing. Adding oranges %26amp; sunflower seeds to salads is really tasty.
Toss in pretty much any vegetable that you can cut into bite size pieces. Bell peppers (yellow, orange, red), zuchini, radishes, mixture of greens, cucumber, celery, carrots, pea pods.
Toss in a bit of fruit. I've always limited my fruit to one per salad. Apples with light flavored greens. Orange with spinach or arugula.
I like to toast some seeds - pumpkin and sunflower seeds.
For dressing, make your own. Remember to have a bit of sweet, a bit of 'sour'. I made a great dressing last week with olive oil, balsamic vinegar, red vinegar, some berry jam and a bit of honey. It was really nice.
If you're dieting, stay away from iceberg lettuce. It has almost no nutrients and not a lot of flavour. Go for something more robust like green leaf lettuce, butter lettuce, mixture of baby greens.
broccli salad
1 teaspoon salt
5-6 cups fresh broccoli florets (about 1 pound of florets)
1/2 cup toasted slivered almonds
1/2 cup cooked, crumbled bacon
1/4 cup of red onion, chopped
1 cup of frozen peas, thawed (or fresh peas if you can get them)
1 cup mayonnaise
2 tablespoons apple cider vinegar
1/4 cup honey
1 Bring a large pot of water, salted with a teaspoon of salt, to a boil. Add the broccoli florets. Cook 1-2 minutes, depending on how crunchy you want the broccoli. 1 minute will turn the broccoli bright green, and leave it still pretty crunchy. 2 minutes will cook the broccoli through, but still firm. Set your timer and do not cook for more than 2 minutes, or the broccoli will get mushy. Drain the broccoli and immediately put into a bowl of ice water to stop the cooking. Let cool and drain.
2 Combine broccoli florets, almonds, crumbled bacon, chopped onion, and peas in a large serving bowl. In a separate bowl, whisk together mayonnaise, cider vinegar and honey. Add dressing to the salad and toss to mix well. Chill thoroughly before serving.
Serves 4 to 6.
if you like spinach this one is great, if you don't, try a leafy dark green instead.
1 bag spinach
chopped walnuts or pecans to taste
shredded carrot
Newmans Own - light raspberry walnut vinegarette
*you can also throw in chopped apples, mandarin oranges or slices of pear
get some mix green and balsamic vinger and some draid cranberry and some mix nuts very yummy
1/4 cup-pecans
1/5 cup- dried currants
2 or more pieces of grilled chicken with some herbs, and sweet glaze, sliced
blue cheese
heart of romain lettuce
and toss everything together
This is one of my favorite combos - and it makes just enough for 2...
* 3-4 Cups Arugula
* 1 Large grapefruit, peeled and sectioned (make sure to remove all of the white pith)
* 2 Avocados, sliced
* 2 Slices of red onion, cut paper-thin
* 12 Nicoise olives
* Kosher salt, to taste
Divide everything evenly into 2 bowls %26amp; top with dressing.
YUM!
I eat a ton of salads - depending on my mood, I also love to add grilled salmon or tuna, black or garbonzo beans, artichoke hearts, boiled eggs, scallions, different kinds of radishes, minced garlic, grilled chicken or steak, baby bella mushrooms, raw or blanched broccoli and snow peas...I go a little crazy, but salads are so good for you! Have fun and Happy New Year to you and yours!
