This is so easy, with 2 variations. I made it for Christmas, and everyone loved it!
GREEN SALAD DELUXE
1-2 bags mixed baby salad greens
1 large can mandarin oranges, drained
1/2 red onion, thinly sliced
1/2 - 1 c. sliced almonds, carmelized (stirfry in sugar until sugar melts %26amp; coats the nuts - cool. Do this ahead)
Girard's Champagne or Original salad dressing
....Just toss together...
Variation:
Use fresh raspberries or sliced strawberries instead of mandarin oranges...
Use walnuts or pecans, instead of sliced almonds

Chinese Ramen Salad
1 large head of cabbage, chopped
1 bunch green onion, chopped
1 cup slivered almond, sauteed in 1 tablespoon butter
2 T sesame seeds, sauteed in butter
2 packages instant ramen noodles (keep the seasoning packets for later)
Dressing
1 cup oil
1/3 cup sugar
1/2 cup rice vinegar (or apple cidervinegar)
2 seasoning packets from the topramen
Saute slivered almonds and sesame seeds in 1 Tbl butter, set aside.
Chop cabbage and onions - mix together. break up Top Ramen into small pieces and add to mixture. Now add nuts and seeds.
Dressing: mix together dressing ingredients plus 2 seasoning packets and pour over salad and toss together.
You may also add sunflower seeds if you like. You may even make this recipe a day ahead and then the ramen noodles are softer.
Sometimes I add shredded chicken breasts in as well.
The one that I get asked over and over for the recipe is a pasta salad with Penne Pasta, Artichoke hearts ( cut up), black olives, sugar snap peas, green onions, and roasted red peppers (Jar). The dressing is Cardini's Caesar Dressing. The secret to it is after you drain the pasta and while it is still hot, crush two cloves of garlic on the hot pasta and drizzle olive oil over it Toss is and refrigerate. Don't add the other ingredients until the pasta is cooled. Toss it a couple of times while it's cooling. You can add boiled shrimp or chunks of chicken also.
quantities of every thing will depend on how many you are serving.
Shrimp with Lettuce %26amp; Corn Flakes
Serves: 4
Ingredients:
600g peeled shrimp
8 water chestnuts
10g asparagus
4 fresh black mushrooms
4 slices lettuce
1/2 cups corn flakes
Method:
1. Pick out shrimp intestines, rinse and dice.
2. Dice water chestnuts, asparagus and mushrooms, then set aside.
3. Pour some oil in wok, stir-fry shrimp until done and remove from the heat. Stir-fry water chestnuts, asparagus and black mushrooms in wok until done, and remove from the heat. Mix shrimp and cooked ingredients well, drain off oil and fold into dressing.
4. Rinse lettuce and drain. Place on plate and fill in step 3. Sprinkle with corn flakes and serve.
Mayonnaise with Cream Dressing:
Ingredients:
2 tbsps whipped cream
6 tbsps mayonnaise
1 tsp lemon juice
Method:
1. Stir whipped cream and mayonnaise well.
2. Add lemon juice to step 1 and stir well.
Tex-Mex Salad..it's always a HIT and I always get asked for the recipie
3-4 med. tomatoes chopped and cubed
1/2 large green pepper chopped and cubed
1/2 large yellow or red pepper choppped and cubed
3 tbsp. olive oil
3 tbsp. red wine vinegar
1 clove garlic minced
2 tbsp. chopped Fresh broadleaf parsley(or curly parsley)
1 tbsp. chilli powder
2 cups Rottini Pasta (cooked and drained)
1/4 cup cheddar cheese (cubed)
salt and pepper to taste
Combine the cubed tomatoes, and peppers in a large bowl.
In a cup...combine the oil, vinegar, garlic, parsley , salt , pepper and chilli powder, stir to combine flavours.
Pour over the tomatoe mixture, combine
Add drained cooked Rottini pasta, stir to combine, and add the cubed cheese, gently stir the mixture to infuse all ingredients*
Chill covered in the fridge at least an Hour to overnight to enhance the flavours* periodically give it a stir to combine*
Before serving....give another stir
ENJOY*~
awsome with anything as a side dish.........Grilled bbq chicken, burgers...YUM*
TACO SALAD OR DIP
1 lb Lean hamburger or ground turkey
1 envelope Taco seasoning mix
1 bottle Catalina French Salad Dressing
陆 big bag Tortilla chips, broken up some
4 oz Jalapeno peppers, sliced
4 oz Sour cream
4 oz Shredded Mexican cheese (or more to taste)
Garden salad including lettuce, tomato, onion, green peppers, scallions, cucumbers or whatever you like
1. Cook hamburger with taco seasoning according to package directions. Chill while making salad.
2. Combine salad, taco meat, cheese and tortilla chips
3. Moisten with Catalina dressing to desired wetness, toss well
4. Serve immediately with sour cream and jalapenos on side
If making into a dip, be sure your salad ingredients are cut very small. Use tortilla chips to scoop up the dip (I took this to a pot luck and the others ate it this way before I could assemble it into a salad, they liked it so I just smiled and took the credit for a wonderful dip).
If taking to a pot luck, add the dressing and tortilla chips at the location so it doesn鈥檛 get soggy.
I work for a catering service and these are the ones we get the most compliments on.
Pasta Salad
1lb twisty pasta
1 can black olives chopped
1 onion diced fine
1 green pepper diced fine
2 tomato's diced
2 packs pepperoni diced
1 cup Parmesan cheese
1 large bottle Italian salad dressing
1 large bottle French dressing
Cook pasta as directed, drain. let cool. mix remaining ingredients. Refrigerate a couple hours { this may seem like a lot of dressing but the pasta will absorb most of it as it sets.
Cauliflower and Bacon Salad
1 large head of lettuce Cut small
2 lbs of bacon fried crispy
1 large head of cauliflower cut into small pieces
2 cups Miracle whip
1/2 cup sugar
mix lettuce and cauliflower, crumble bacon up and mix in. mix dressing and sugar. Pour over top and mix in well. Refrigerate a couple hours
carmelized onions with agave nectar
walnuts baked with garam masala and brown sugar
camambert cheese wedges
blood orange segments
serve the above on a bed of lamb's lettuce or mixed greens
as a dressing use a blend of olive oil, apple cider vinegar, and hjortron jam (cloudberry jam)
