First salad





Fiesta Taco Salad





Ingredients


- CHI-CHI'S Salsa, sour cream, diced avocado and sliced ripe olives


- 1 pound ground beef


- 1 package CHI-CHI'S庐 Restaurante Seasoning Mix


- 8 hard taco shells


- 3 cups shredded lettuce, divided


- 2 cups shredded Monterey Jack and Cheddar cheese blend, divided


- 1 cup chopped tomato














Fiesta Taco Salad





Servings: 6


Prep Time: 15 minutes


Cook Time: 30 minutes





Directions


In large skillet, brown beef; drain. Add taco seasoning as package directs. Meanwhile, heat taco shells in a 350掳F oven for 5-7 minutes. Spread 1 1/2 cups shredded lettuce onto platter. Break heated taco shells over lettuce and sprinkle with 1 cup of cheese. Spoon meat mixture over cheese and top with remaining ingredients. If desired, top with salsa, sour cream, diced avocado and sliced ripe olives.

Prepare corn according to package directions. In medium bowl, combine hot


corn and all remaining ingredients; mix until well blended.

Anti Pasta Salad





ANTI PASTA SALAD





1 box shells, cooked


1 lb. salami %26amp; pepperoni, cubes


1/2 lb. provolone cheese, cubes


1 onion, chopped


2 sticks celery, chopped


2-3 tomatoes, chopped


1 jar green olives, chopped


1 can black olives, chopped





DRESSING:





3/4 c. oil


1/2 c. vinegar


1 tbsp. oregano


Salt %26amp; pepper to taste





Prepare all vegetables, meat and cheese; mix with shells. Mix oil, vinegar, oregano, salt and pepper. Pour over shell mixture.





Cranberry Apple Salad





Dressing Ingredients:


2/3 cup sour cream


1/3 cup mayonnaise





Salad Ingredients:


2 medium (2 cups) apples, cubed 1/2 inch


2 teaspoons lemon juice


1/2 cup sweetened dried cranberries


1/2 cup seedless green grapes, halved


1/2 cup chopped walnuts


1 rib (1/2 cup) celery, chopped


Combine sour cream and mayonnaise in small bowl; set aside.


Place apples and lemon juice in large bowl; gently toss. Add all remaining salad ingredients. Add dressing; toss to coat. Cover; refrigerate 1 hour before serving.


Makes 8 servings.

Cranberry Apple Walnut Salad with Cranberry Vinaigrette


INGREDIENTS


1/2 cup chopped walnuts


1/4 cup cranberries


1/4 cup balsamic vinegar


1 cup red onion, chopped


1 tablespoon white sugar


1 tablespoon Dijon-style prepared mustard


1 cup vegetable oil


salt and pepper to taste


10 cups mixed salad greens, rinsed and dried


2 Red Delicious apples, cored and thinly sliced





DIRECTIONS


Preheat the oven to 350 degrees F (175 degrees C). Spread the walnuts out on a baking sheet in a single layer. Bake for 8 to 10 minutes in the preheated oven, or until lightly toasted.


In a food processor, combine the cranberries, vinegar, onion, sugar, and mustard. Puree until smooth; gradually add oil, and season with salt and pepper.


In a salad bowl, toss together the greens, apples, and enough of the cranberry mixture to coat. Sprinkle with walnuts, and serve.





Cottage Cheese Salad





What You Need


1 (16 ounce) container cottage cheese, drained


4 roma (plum) tomatoes, chopped


4 green onions, chopped


2 medium cucumbers, peeled and diced


salt and pepper to taste





What You Do


In a medium bowl, stir together the cottage cheese, tomatoes, green onions, and cucumbers. Season with salt and pepper to taste. Chill until serving.





Cottage Cheese and Cantelope Salad





You Will Need


2 cups (16 ounces) 1% cottage cheese


1/2 cup raisins


1/4 cup chopped walnuts


1 medium cantaloupe, quartered and seeded


1/4 cup reduced-fat granola


2 kiwifruit, peeled and sliced


Leaf lettuce





What to Do


1. In a bowl, combine the cottage cheese, raisins, and walnuts; mix well.





2. Spoon into cantaloupe wedges.





3. Sprinkle with granola; top with kiwi. Serve immediately on lettuce-lined plates.





Serves: 4

Masterfoods. They sell spices and herbs., here in Australia. They have some great recipes that are very tasty.


Just look up on Internet
Some of the most liked recipes at my deli were, chicken salad with granny smith apples and green grapes. Another one was chicken salad with dried cranberries and walnuts. Use your imagination, if you don't have one hang it up! Serve what you like the most, experiment.
Make carrot salad with grated carrots, mayo, pineapple chunks and raisins! Yum!
