here you go i love this variation its fantastic and is a winner at our local bean festival!
1 can kidney beans, drained and rinsed
1 can garbanzo beans, drained and rinsed
1 can green beans, drained
1 can wax beans, drained
1 can black beans
1 medium red onion, sliced thin
2 stalks celery, sliced thin
1 green bell pepper
1/4 c. sugar
1/2 c red wine or cider vinegar
1 c EVOO
1 packet Italian salad dressing mix
In a mixer, combine oil sugar, vinegar, and dressing mix. mix on high until emulsified, about 5 minutes or mix in a blender for 45 seconds to 1 minute. Meanwhile in a large bowl combine all the vegetables and toss lightly with dressing. refrigerate 2 hours to over night before serving.
Serves 8
Cowboy Caviar
2 14 oz. cans black beans, drained
1 green bell pepper, diced
1 medium onion, diced
1 15 oz can yellow or white hominy, drained (substitute 1 bag frozen corn, thawed)
2 medium tomatoes, chopped
1 fresh jalapeno pepper, seeded and finely minced
4 green onions, chopped
录 cup fresh cilantro leaves, chopped
1 cup zesty Italian salad dressing (Italian may be used for less spice)
Combine all ingredients in a medium bowl or zip-lock bag and toss to combine. Cover and chill 2 hours or longer before serving. Over night is best. Serve with tortilla chips. Makes about 7 cups
Black Bean and Mango Salad
1 can (15.8 oz) or 1 lb. cooked black beans, drained and rinsed
2 c. mango, diced (may substitute pineapple)
1 red bell pepper, diced
6 green onions, thinly sliced
录 c. cilantro, chopped
录 c. fresh lime juice
1 Tbs. EVOO
1 jalapeno pepper, seeded and minced (may sub hot sauce to taste)
Salt to taste

Garden Corn and Black Bean Salad
4 ears corn, shucked, or 2 cups frozen whole kernel corn, thawed
1 tablespoon olive oil
1 jalape帽o chile, seeded and finely chopped
1 (15-ounce) can black beans, rinsed and drained
1 large red bell pepper, cut into 1-inch pieces
1 cup cherry tomatoes, halved
4 green onions, cut on the diagonal into 陆-inch pieces (green part only)
陆 cup chopped red onions
Dressing:
戮 cup bottled reduced-calorie Italian salad dressing
2 tablespoons chopped cilantro, or parsley
2 tablespoons lime juice
1 garlic clove, minced
陆 teaspoon ground cumin
陆 teaspoon Tabasco sauce
戮 teaspoon salt
1. To prepare salad, cut kernels off ears of corn.
Heat olive oil in a large skillet over medium-high heat.
Add corn and jalape帽o.
Cook until the corn is lightly browned,
2 to 3 minutes, stirring frequently.
Transfer to a large bowl; cool slightly.
Stir in black beans, bell pepper, tomatoes, and green and red onions.
2. To prepare dressing, combine bottled dressing, cilantro,
lime juice, garlic, cumin, Tabasco and salt in a jar.
Secure lid and shake to blend.
Pour over corn mixture, cover with plastic wrap,
and refrigerate at least 6 hours or overnight.
3. To serve, toss lightly
and transfer to a salad bowl lined with lettuce leaves, if desired.
Serves 8.
Well you have to try this one then.
Depending on how much you want to make depends on how many cans of beans you choose.
I like light red kidney beans, mixed beans, garbanzo beans and northern beans.
Drain all the beans of the liquid that comes in the can with them.
Add these to a bowl with a large sweet onion chopped. Pour over this a large bottle of French Dressing.
When you are ready to serve and not before add a large bag of Frito Corn Chips (regular size).
Mix well and enjoy!
A jar of great northern beans drain them and put into a bowl with a small diced sweet onion and an 8 oz bottle of italian dressing. Mix it up and let sit in fridge over night. (or not, it's still good) You can use a high fat or no fat zesty italian dressing, it's all good.

I like to mix canned kidney beans (rinsed) with chopped dill pickles, onions, celery and hard-boiled eggs with Miracle Whip and a tablespoonful of sugar.
