Italian Lemon Pasta Salad: Cook bow tie pasta according to instructions on the pasta package. Rinse and lightly coat with cool chill in covered container. Ziplocs work fine. Make vinaigrette with lemon juice instead of the usual vinegar adding a little red wine vinegar, a few smashed garlic cloves and salt, pepper and dried oregano to taste, Add finely diced scallions, artichoke hearts and peeled seeded and diced red bell peppers . I like extra virgin olive oil in the salad dressing. Mix all of the ingredients together. If you hold this overnight you may wish to taste to see if you need additional salt or lemon. This is best with fresh lemon juice. I offer Parmesan cheese on the side but it is optional. Look for the Italian Lemon Chicken recipe from Rao's Restaurant that is located in Harlem N.Y, N.Y.. I created this pasta to go with that chicken recipe and the chicken is excellent... The pasta may also be served hot....I am looking for some pasta salad recipes.
