Lobster Cobb Salad (serves 4 to 6)

1 1/2 tablespoons Dijon mustard
1/4 cup freshly squeezed lemon juice (2 lemons)
5 tablespoons good olive oil
3/4 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
For the salad:
2 ripe Hass avocados
Juice of 1 lemon
1 1/2 pounds cooked lobster meat, cut in 3/4-inch dice
1 pint cherry tomatoes, cut in half or quarters
1 1/2 teaspoons kosher salt
1/2 teaspoon freshly ground black pepper
1/2 pound lean bacon, fried and crumbled
3/4 cup crumbled English Stilton, or other crumbly blue cheese
1 bunch arugula, washed and spun dry

For the vinaigrette, whisk together the mustard, lemon juice, olive oil, salt, and pepper in a small bowl.
For the salad, cut the avocados in half, remove the seed, and peel. Cut into 3/4-inch dice and toss with the lemon juice. If the arugula leaves are large, cut them in half crosswise.
Put the lobster and tomatoes in a bowl. Sprinkle with the salt and pepper and toss with enough vinaigrette to moisten. Add the diced avocados, crumbled bacon, blue cheese, and arugula and toss again. Serve at room temperature.
Cheese Straws (makes 22-24 straws)

1⁄2 cup freshly grated Parmesan cheese
1 cup finely grated Gruyère cheese
1 teaspoon minced fresh thyme leaves
1 teaspoon kosher salt

Preheat the oven to 375 degrees.
Roll out each sheet of puff pastry on a lightly floured board until it’s 10 3 12 inches. Beat the egg with 1 tablespoon of water and brush the surface of the pastry. Sprinkle each sheet evenly with 1/4 cup of the Parmesan, 1/2 cup of the Gruyère, 1/2 teaspoon of the thyme, 1/2 teaspoon of the salt, and some pepper. With the rolling pin, lightly press the flavorings into the puff pastry. Cut each sheet crosswise with a floured knife or pizza wheel into 11 or 12 strips. Twist each strip and lay on baking sheets lined with parchment paper.
Bake for 10 to 15 minutes, until lightly browned and puffed. Turn each straw and bake for another 2 minutes. Don’t overbake or the cheese will burn. Cool and serve at room temperature.
You want to work quickly because the puff pastry needs to stay cold until it’s baked. You can also brush the pastry with pesto, tapenade, or sun-dried tomato paste instead of sprinkling with the cheeses.
Cheddar Corn Chowder (serves 10 to 12)

1/4 cup good olive oil
6 cups chopped yellow onions (4 large onions)
4 tablespoons unsalted butter
1/2 cup all-purpose flour
2 teaspoons kosher salt
1 teaspoon freshly ground black pepper
1/2 teaspoon ground turmeric
12 cups chicken stock
6 cups medium-diced white boiling potatoes, unpeeled (2 pounds)
10 cups corn kernels, fresh (10 ears) or frozen (3 pounds)
2 cups half-and-half
1/2 pound sharp white Cheddar cheese, grated

In a large stockpot on medium-high heat, cook the bacon and olive oil until the bacon is crisp, about 5 minutes. Remove the bacon with a slotted spoon and reserve. Reduce the heat to medium, add the onions and butter to the fat, and cook for 10 minutes, until the onions are translucent.
Stir in the flour, salt, pepper, and turmeric and cook for 3 minutes. Add the chicken stock and potatoes, bring to a boil, and simmer uncovered for 15 minutes, until the potatoes are tender. If using fresh corn, cut the kernels off the cobs and blanch the kernels for 3 minutes in boiling salted water. Drain. (If using frozen corn, you can skip this step.) Add the corn to the soup, then add the half-and-half and Cheddar. Cook for 5 more minutes, until the cheese is melted. Season to taste with salt and pepper. Your first answerer has an amazing salad recipe yummmm!!!! I was going to suggest to you my Mom's Greek Salad that I crave oh so badly right now! I tried to buy all the stuff for it like 6 months ago but I have yet to make it just because it's my mom's, not mine. I could never make it as well as her but please please please try this if not for your brunch, for yourself. Ok first saute some shrimp in butter and garlic, then put those in the refridgerator. Then mix together a romaine lettuce and spinach leaves, put feta cheese on top, my mom used red onions but i HATE onions so i would advice against that haha, grapes, and Newman's Own light vinagarette dressing. Any kind is acceptable but I like cranberry walnut. Also, for this recipe you need to toast some walnuts to top the salad with. All you do is put them in a drying pan with little or no olive oil ( you can use any oil ) and toast them for about 5 to 10 minutes depending on how crunchy you like them. Top your salad with the shrimp and walnuts :D This recipe is soooo delicious, my mom made me try it cuz i thought it was weird but after trying it i was likke hmmmmm grapes DO taste great on a salad! Now i want a salad :[ God bless girl!

Chinese crispy noodles, the ones restaurants have in the lil bags
Thai peanut sauce, not dressing, sauce is much more flavorful.
Mix and eat!
You can add chicken, sesame seeds, canned mandarin oranges, any veggies you like and boiled sliced eggs are good too.
I like it plain as my recipe stated, this is a really good salad, simple yet so flavorful!

Fresh made bacon bits, cook bacon, but not crispy, run through the food processor to make small bits of bacon.

You can add any veggies you like, I serive this as is and its very good.

Take a pkg of cream cheese, and quickly cut and roll small balls of cream cheese, do it quickly so they wont get warm and roll in your

Use a sweet salsa as dressing, likea mango salsa, or other fruited mild salsa. Keep everything well chilled, and mix softly and serve right away, sounds weird is very good.
Chicken Breast
Mayonaise
Red or Green Grapes(you can cut in half or leave whole)
Walnut (Finely Chopped)
Mrs. Dash Original (Use a few dashes)
Mix all these ingredients together, you substitute the chicken breast for White Albacore Tuna, and also you the whole walnuts as a garnish on top.

I would recomend Greek salad. Go to Cooks.com for a listing of many great recipes for Greek salad. In addition, steamed vegetables, fruit salad, and freshly baked goods will go nice at a brunch. Good luck to you
