Does anyone have any classic Potato salad recipes?

Please help!Does anyone have any classic Potato salad recipes?
Classic Potato Salad





2 pounds red boiling potatoes, scrubbed


2 tablespoons red wine vinegar


1/2 teaspoon salt


1/2 teaspoon freshly ground black pepper


3 hard-cooked eggs


1 small celery stalk


1/4 cup chopped sweet pickle (not relish)


3 scallions


2 tablespoons chopped fresh parsley


1/2 cup mayonnaise


2 tablespoons Dijon-style mustard





Place potatoes in a pot with water to cover. Bring to a boil, cover and simmer, stirring to ensure even cooking, until a thin-bladed paring knife or a metal skewer inserted into a potato can be removed with no resistance, 25 to 30 minutes. Drain, rinse under cold water and drain again. Cool slightly.


Cut warm potatoes into 3/4-inch dice with a serrated knife. Layer them in a bowl, seasoning with vinegar, salt and pepper as you go. Cut eggs, celery and pickle in 1/4-inch dice and thinly slice scallions. Add to potatoes, along with parsley. Stir in mayonnaise and mustard until everything is combined. Chill, covered, before serving.

5 lbs of potatoes


1 lb thick-sliced bacon


1 medium yellow onion


1 large green pepper


1 48-oz jar of Hellmans Mayonnaise (do NOT use any other!!!! Not Miracle Whip, not store-brand mayo, must be Hellmans!!)








Slow-boil the potatoes till fork-tender and drain. Let them cool and then peel/dice. Fry the bacon until crispy and save about 1/4-cup of the fat; crumble the bacon in with the potatoes and pour the bacon grease over the potatoes and let it soak in. Dice the onion and pepper and mix in. Finally, pour the whole jar of mayo in and mix thoroughly. Chill for approx. 2 hr before serving.





Yes, I know the health Nazis will go nuts, but like I said, I've never had leftovers XD
mayo usually has recipes on the side of the jar, but I know you'll need mayo, potatos, and mustard. I don't make things..sorry!
I don't know, but I ate some the other day made with sour cream instead of mayo.....it was great!!!! YUMMY!!!!!!! you should try it :)
I love the classic Italian-style potato salad, because it is much healthier for you, and I think much more flavorful. It does not use mayo, so no cholesterol or toxic chemical additives.





You can use any pototoes, but my favorite is to get the small organic red potatoes, clean them really well but leave the skins on, and just cut them in halves or quarters depending on the size. Boil them to cook, but leave them on the slightly firm side, don't turn them to mush. Then mix with sliced celery, halved sweet cherry tomatoes, sliced green onion, a little minced garlic, chopped italian parsley, plenty of fresh ground black pepper, and whatever other good fresh herbs are available (thyme, oregano, summer savory all work well). Dress very simply with a dressing of extra virgin olive oil, a little balsamic vinegar, and just a touch of mustard. Potatoes need a little salt, but keep it light. Then you can really taste the potatoes.
Homemade Potato Salad





10 Hard-boiled eggs, cooled %26amp; shelled (for divided use)


2 lbs Yukon Gold (or any kind) potatoes, peeled or not, boiled until just tender - better when undercooked slightly. Once cool, dice potatoes into 1 inch cubes, set aside.





With a fork, mash 8 of the eggs into small bits in a large bowl. Add to it, 1 1/2 cups Miracle Whip and 1/4 cup milk, 1 TBSP Frenchs Mustard, several grinds of fresh pepper, 1 tsp sugar, 1 small onion finely minced, 1 stalk of celery finely diced and stir together until blended. Salt to taste only.





Pour the dressing onto the potatoes and gently fold the dressing through the potatoes. Don't over stir as it will break the potatoes and create a strange mash! If it seems too dry, add more Miracle whip by spoonfuls. Taste and adjust seasoning as necesary.





Serve with the remaining two eggs sliced and arrainged decoratively across the top.
Common ingredients are:


potatoes (boiled, not overcooked)


mayo


mustard


sour cream (not too much)


eggs (boiled, mashed)


onion (chopped super fine)


pickles (sweet relish)


paprika (sp?)

1 small bag of red potatos


1/2 onion


6 boiled eggs


1 cup of mayo


1/4 cup of yellow mustard


1/8 cup of brown mustard


1 tablespoon of sugar


1/2 tablespoon of horseradish


1 tablespoon of fresh cracked pepper


1 tablespoon of salt





cut potatoes into bite sized chunks and biol until just fork tender. Run potatoes under cold water to cool. Chop onion up fine and add to potatoes. Separate yolks from egg whites, chop egg whites up and put into potatoe/onion mix. Blend together yolks and rest of ingredients until smooth. Gently fold into potato/egg white/onion mixture. Refrigerate until cold. Tastes best second day.
using Hellmann's Mayo really makes a difference...

and enough mayo to make it really creamy
