I decided to ask a fun question, and I figure I might as well try a new potato salad while I'm hating being single . Does anybody have any ideas ?Does anybody have any good potato salad recipes ?
this is one from taste of home that I tried earlier this summer and its really good
Tangy Potato Salad
SERVINGS: 10-12
TIME: Prep: 15 min. + chilling
Ingredients:
* 8 cups cubed peeled cooked potatoes (about 11 mediium)
* 10 bacon strips, cooked and crumbled
* 3 hard-cooked eggs, chopped
* 1 carton (8 ounces) French onion dip
* 1/2 cup dill pickle relish
* 1/2 teaspoon salt
* 1/2 teaspoon pepper
* Leaf lettuce, optional
Directions:
In a large bowl, combine the potatoes, bacon and eggs. In a small bowl, combine the dip, relish, salt and pepper. Stir into potato mixture. Cover and refrigerate for at least 2 hours. Serve in a lettuce-lined bowl if desired. Yield: 10-12 servings.Does anybody have any good potato salad recipes ?
I use 5-10 lbs of potatoes quartered
a dozen eggs
boil them together
drain them when you can stick a fork in the potato
run your eggs under cold water peel and dice
dice up 6-8 large DILL pickels
1/2 jar best foods mayonaise and pickle juice
and 2T salt and dill weed
pickle juice, mayo, salt, and dill weed in a jar mixes really well
you being single you may want to cut the reciepe down to like a 1/4 of what I make since I feed an army

This is a really good hot potato salad recipe:
1 pound of small red new potatoes, washed and diced into halves
1/2 pound bacon, fried crispy and broken into small pieces
1/4 cup finely chopped purple onion
1/2 cup shredded cheddar cheese
3/4 cup Ranch Dressing
Wash and cut up the potatoes and put to boil. Once tender, drain water and let sit for about 5 minutes, to be sure all water is dried out. Put them in a mixing bowl and add the remaining ingredients. Mix thoroughly and salt and pepper. This is very good when bar b quing and with homemade mac-n-cheese on the side and baked beans of course.
My Mom has made this potato salad for years and always gets compliments. I've recently learned to make it myself. =] My fiance's brother in-law hates potato salad but likes this one.
This recipe makes alot but you can easily shrink it down.
Boil 12 potatoes WITH the skin on (this is a MUST!) for approx 30-40 minutes. Stick a fork in them to check. You don't want them to hard or to soft.
After potatoes cool off (this will take a little while) peel off the skins of the potatoes. You should be able to do this with your fingers.
While potatoes are cooking you can also hard boil 6 eggs. (Notice that I use half the amount of eggs as there are potatoes.) If your unsure on the length of time to cook the eggs, it's about 15 mins.
Once eggs are done cooking run them under cold water to cool them and then begin to peel them.
Once eggs and potatoes are done cooking cube them into a bowl. And yes, do use the egg yolk!
Cube half of a walla walla sweet onion. You can use less if your not a fan of onion but don't use more. The onion will over power the salad.
Add one small can of black olives. Cut them in half first.
Cube cheddar cheese. The amount will vary. I ';color'; the salad with this. Basically add as little or as much as you want. Don't over do it though. Make sure the cubes are relatively small.
Add one small jar of DILL relish.
The wet ingredients aren't really measured. It's all to taste.
LIGHT (you won't know the difference and neither will anyone who eats this) Best Foods mayo. Start off will a few good sized dallops. You want the salad to be ';wet.';
Regular yellow mustard. You only need about 1/4 cup. Again, this is to taste. Start off small and add after you added all wet ingrediants.
Red wine vinegar. About two splashes is plenty.
Salt and Pepper to taste.
Refrigerate before eating and enjoy! =]

Ranch Potato Salad
Ingredients:
2 pounds red potatoes
1 bottle (8 ounces) ranch salad dressing
1 cup (4 ounces) shredded cheddar cheese
1 package (2.8 ounces) real bacon bits
1/4 teaspoon pepper
Dash garlic powder
Directions:
Place potatoes in a large saucepan and cover with water. Bring to a boil. Reduce heat; cover and simmer for 20-25 minutes or until tender.
In a large bowl, combine the remaining ingredients (dressing will be thick). Drain potatoes and cut into cubes; add to the dressing and gently toss to coat. Cover and refrigerate for 2 hours or until chilled. Refrigerate leftovers. Yield: 6-8 servings.

Three Potato Salad
Ingredients:
3 medium russet potatoes, peeled and cubed
3 medium unpeeled red potatoes, cubed
1 large sweet potato, peeled and cubed
1 medium onion, chopped
1 cup mayonnaise
2 tablespoons sugar
1 tablespoon white vinegar
1 teaspoon salt
3/4 teaspoon dill weed
1/2 teaspoon pepper
Directions:
Place all of the potatoes in a Dutch oven; cover with water. Cover and bring to a boil. Reduce heat; cook for 20-30 minutes or until tender. Drain and cool.
Place potatoes in a large bowl; add onion. In a small bowl, combine the remaining ingredients. Pour over potato mixture and toss gently to coat. Cover and refrigerate overnight. Yield: 15 servings.

German Potato Salad
Ingredients:
1-1/2 to 2 pounds bacon
3-1/2 pounds potatoes, boiled, peeled and diced (about 7 cups)
1-1/2 cups chopped onion
1/4 cup all-purpose flour
1/4 cup sugar
1-1/2 cups water
1/4 cup cider vinegar
1-1/2 teaspoons salt
1/4 teaspoon pepper
1/2 cup half-and-half cream
Directions:
In a large skillet, cook the bacon until crisp. Drain, reserving 3 tablespoons drippings. Crumble bacon. In a large bowl, toss bacon with potatoes and onion; set aside. In the drippings, combine flour and sugar. Combine water, vinegar, salt and pepper; stir into skillet. Cook and stir until thickened and bubbly. Stir in cream. Pour over potato mixture; toss gently to coat. Serve warm. Yield: 12 servings.

Creamy Potato Salad
Ingredients:
4 small red potatoes, cubed
1/4 cup water
1/3 cup mayonnaise
1 hard-cooked egg, chopped
2 tablespoons chopped celery
2 tablespoons chopped carrot
2 tablespoons chopped red onion
2 teaspoons sweet pickle relish
1/8 teaspoon salt
1/8 teaspoon pepper
Directions:
Place the potatoes in a microwave-safe bowl; add water. Cover and microwave on high for 4-5 minutes or until tender; drain and rinse in cold water.
In a bowl, combine the remaining ingredients. Add potatoes and gently toss to coat. Cover and refrigerate until chilled. Yield: 2 servings.
cut z potatoes in cubes, boil them until cooked (take care not to over cook them) put in bowl in ice cubes to avoid over cooking
put some olive oil, 2 mince garlic cloves, salt, pepper, 1 lemon juice, Corenda (fresh or dry) mix all then add the potatoes

roast the small finger potatoes, leave skin on.
add a little olive oil and rosemary. Cook until done.
wait until the potatoes are cool, cut into mouth size pieces.
chop onions and celery add salt and pepper and your vegan mayo

boiled baby potatoes cooled. dressing; one tblesp mayo, one tblesp fromais frais and one teasp wholegrain mustard. Mix together and bobs your uncle!!!!
