MOONLIGHT SALAD DRESSING
1 pint Hellmann's Mayonnaise
1 package dry Hidden Valley Ranch Dressing
2/3 cup Parmesan cheese
1 cup milk
salt, pepper, garlic, to taste
*optional (fish sauce or anchovy paste, to taste)
Mix Well.
Shred 1 head of lettuce into bite-sized pieces. Sprinkle with crushed croutons. Pour on dressing.
Stir well and serve immediately.
If you like a thinner dressing, add slightly more milk.

GREEK SALAD DRESSING
3 tbsp. lemon juice
3 tbsp. water
2/3 c. olive oil
1 tsp. dried oregano
1 env. Good Seasons Italian salad dressing mix
3 tbsp. chopped black olives
Mix juice, water and salad dressing mix in jar or cruet with tight lid. Shake 10 seconds. Add oil, oregano and olives. Shake again. Makes 1 cup.
CAESAR SALAD DRESSING
1 cup mayonnaise
1 tbsp lemon juice
1 tsp Worcestershire
1 clove of garlic (minced)
1/4 tsp salt
1/8 tsp pepper
1/2 c Parmesean cheese
1 tbsp of milk or half and half
Mix all ingredients together and shake or whisk until well blended.
HONEY ORANGE SALAD DRESSING
1 3/4 cups plain yogurt
1/4 cup honey
1/8 cup frozen orange concentrate, thawed
1/8 cup freshly squeezed lemon juice
3/4 teaspoon freshly grated orange rind
1/2 teaspoon vanilla extract
1/4 teaspoon freshly grated ginger
Combine all ingredients. Place in a nonmetallic container in the refrigerator. Can be stored for two days.

Simply first-pressed virgin olive oil, with lemon juice. But have you tried real aged Balsamic vinegar, preferably from Modena Italy? It's magnificent and a thing all its own. Mouth-watering. Worth going to Modena to get it, if you can't find it locally, I reckon! Try your most famous local Italian chef to find it?
Because of a fermentation allergy I replace all the vinegar in ';salad dressing'; recipes with Lemon Juice. Start by using 3/4 of the amount to replace vinegar, then taste adding more if needed. Make up the difference in volume with a bit of water.
To one cup good mayo add several spoonfuls of tomato sauce (enough to desired thickness). Can use like that or also can add a spoonful of sweet relish.

Just substitute lime juice or lemon juice and some water for vinegar.
Cucumber Ranch Dressing
1 cup mayonnaise
1 cup buttermilk
2 medium cucumber, peeled, seeded, and pureed
2 tablespoons finely chopped green onion tops
2 teaspoons minced parsley
2 teaspoons celery seed
1/4 teaspoon garlic powder or 1/2 to 1 garlic clove, finely minced
1/4 teaspoon onion powder
1/4 teaspoon paprika
1/8 teaspoon cayenne pepper
1/4 teaspoon salt
1/4 teaspoon black pepper
Combine all ingredients, mixing well. Place in container with lid and refrigerate for at least 2 hours before using.
