Spinach with Hot Bacon Dressing
1 - bag of fresh spinach
6 strips of bacon
4 green onions/scallions
sugar
Red Wine vinegar
Place the spinach into a large salad serving bowl.
Cut the bacon into small pieces and cook in a medium saucepan until you have crispy bacon bits. Remove from the grease and set aside, but do not discard the grease from the pan.
Thinly slice the four scallions - you should have about a 1/4 cup of them (or so).
Pour the hot bacon grease into a small Pyrex measuring container.
Add an equal amount of Red Wine Vinegar. Add an equal amount of sugar.
Put the contents of the Pyrex container back into the saucepan along with the green onions. Heat until bubbly, stirring often as you do not want to burn the sugar. Add the bacon bits and stir for about 30 seconds. Remove from heat and immediately pour entire contents over the spinach
Toss well and serve.
Anyone have good salad or salad dressing recipes?
My wife and I love a salad I make....I uses Napa Cabbage or Bok choi, Snow peas, Toasted Almonds, Mandarin Oranges and a pkg of Ramen Noodles. For the dressing I mix one cup of EVOO and 1/3 of Rice wine Vinegar or white Vinegar with 2 Tablespoons of Soy sauce. and to that I add 2/3 cup of Sugar, Whisk the dressing in a sauce pan over low/med heat till sugar dissolves then set aside. Cut cabbage add oranges, almonds and snow peas, add uncooked ramen noodles and then pour on dressing.... Very good with the warm dressing and the Sweet/ sour taste on the cabbage! Very inexpensive to make and a good change from the normal Iceberg or Romaine.
I have a broccoli salad that is to die for.
- One head broccoli
- 3/4 cup shredded cheddar
- a pack of hidden valley ranch dressing ( follow direction on pack 2 mix)
- 1/2 lb bacon
cut all florets into sm pieces
fry bacon to crisp. when cool crunch up into bits
take all ingredients and place in bowl. Add dressing slowly as to not saturate the salad. you want to cover it but not drowned it.
This is a hit at every party.
Well if you like vinegarettes heres a fast and easy one.
1/4 cup red wine vinegar
1/4 cup rice wine vinegar (can also find in the chinease/ethnic section)
1/8 cup extra virgin olive oil
5 tblspn sugar
Mix together, chill for about 1 hour, and serve...yummy! Also can use as a dip for chilled vegs. Yummy
If you get the packaged lettuce's like the baby greens or baby spinach it's easier than cutting lots of lettuce's up.
Bowl full of greens
Chopped chicken strips (hot)
Mandarin oranges
Roasted candied almonds
Shredded cheddar cheese
Use a light vinagrette dressing.....delish
