Anyone have any good potato salad recipes?

it doesn't have to be elaborate, or gourmet..

2 very large baking potatoes


1 8oz. sour cream


3 T mayonnaise


squirt yellow mustard


green onion


bacon bits (I prefer real bacon)


celery


Cajun seasoning to taste (Tony Chachere's)


paprika





Boil potatoes until soft but not mushy. Drain WELL. Add the mayo, mustard and 1/2 of the sour cream to the hot potatoes. Chill. When almost cold add the rest of the ingredients and the rest of the sour cream if the salad is dry. Sprinkle with paprika.

i like to use a combo of phylly cheese, mayo and sour cream in my dressing, its really yummy.


adding beetroot adds colour and a yummy tase too


diced salad onions are nice too


somtimes i might add sweet potato too


bacon bits can be yummy too


scalop your potatoes for a change


add some boiled eggs


grate or shave or dice some cheese in it


add some peas


add some whole grain mustard

I am sorry. But there is no such thing as a good potato salad receipe.
This sort of ';everything but the kitchen sink'; potato salad is perfect for a picnic or buffet.

Time 30 minutes


Tools Large saucepan


Wooden spoon


Strainer


Large bowl





Ingredients 2 pounds potatoes, peeled or scrubbed


4 hard-boiled eggs (optional), chopped


陆-戮 c mayonnaise (regular or vegan)


1 t mustard, prepared or dry


陆 small red onion, chopped OR 1 scallion, sliced


1-2 carrots, peeled (optionally) and chopped


1 cucumber, seeded and chopped


1 stalk celery, chopped





Directions Cut the potatoes into bite-size or slightly larger pieces.


Boil the potatoes for 15-20 minutes, just until the point where you insert a fork and the potato falls off (overcooking can leave you with mashed potato salad).





While the potatoes are cooking, mix the mayonnaise, mustard, and onion.





Prepare the vegetables and stir them into the mayonnaise mixture.





Drain the potatoes, rinse with cold water, and fold them into the vegetables along with the optional eggs. Serve warm.





Notes This salad tastes best warm, so serve it right away or remove from the fridge half an hour before serving.
Loaded Baked Potato Salad








6 servings 30 min 15 min prep


8 potatoes, cubed (half peeled or half with skin)


2 teaspoons salt


6 slices bacon, diced %26amp; crisp cooked


6 green onions


2 cups cheddar cheese, shredded


16 ounces sour cream


1/4 teaspoon pepper


1 cup Miracle Whip





Cube and boil potatoes with salt.


Drain.


Crumble bacon and slice onions (including tops).


Combine sour cream, pepper and Miracle Whip.


Add to potatoes.


Add bacon, onions and cheese (reserve some of each for top).


Mix with potatoes.


Pour into baking dish.


Top with reserved cheese, onions, and bacon.


Bake 350 for 10-15 minutes (until cheese melts).
COUNTRY CLASSIC POTATO SALAD





6 med. potatoes, boiled - save some potato broth


1/2 c. chopped onion


2 hard boiled eggs


1 1/2 tsp. salt


1/4 tsp. pepper


2 tbsp. vinegar


3/4 c. mayonnaise


2 tbsp. pimentos


2 tbsp. sweet pickle relish


1 tbsp. mustard





Peel potatoes and cut in cubes. Mix in onions, chopped eggs, salt, pepper, vinegar, mayonnaise, pimentos, pickle relish and mustard. Add potato broth if needed. Mix well and refrigerate until ready to serve.
I have tried boiling the potatoes with the skins on and cut the potatoes up then boil,I found by experimenting that the potatoes have a better taste when you boil the potatoes with the skin on.then let them cool and peel,cut into pieces to your liking,now add your ingredients,I add eggs,chopped dill pickles,onions,olives,pimentos,,now I put even amount of mayonnaise and sour cream,mix together ,put a little sugar in with this,now add enough milk to this,mixing as you add the milk,so the mixture is like heavy cream or thicker if you like,but not thin,now mix this in to your potatoes ,mix,cover and put in rerefrigerator,OH,don't forget your salt and pepper to your taste,,let it set in frigerator for at least a couple of hours ,let the flavors blend in,yum
This recipe comes from way back in my family. Very simple ingredients.





6 -7 new or red skin potatoes


3 - 4 green onions, chopped to small chunks


3 - 4 boiled eggs


1 med. carrot grated


1 rib of celery, slice the rib length wise into 4 or 5 long pieces, then chop the same size as green onions.


salt %26amp; pepper to taste

Clean the potatoes and boil with skin on. Cool and then peel off the skin and chop into 1 x 1 inch pieces. Take the shells off the eggs and chop 3 into small chunks and add to the potatoes. Now add the onion, celery and grated carrot. Season with the salt and pepper. Add enough Miracle Whip to moisten the salad. Slice the remaining egg and arrange on top. Sprinkle with paprika and cover. Put in fridge for 2 - 3 hours to blend all flavours.
Well it all depends on what you like. Throwing in one of these will give it that extra kick!

GRAMMA'S POTATO SALAD 3 lbs. new potatoes, unpeeled


3 lg. hard-boiled eggs, finely chopped


6 sm. scallions, including tops,


finely chopped


3/4 pt. mayonnaise


3 tsp. salt


3 tbsp. white vinegar


3/4 tsp. pepper


3 tbsp. milk


Paprika





Boil potatoes in salted water until soft but firm. Drain. Cool but do not refrigerate. Peel and slice potatoes into bowl. Add eggs and scallions. Mix to separate potato slices. Combine in a pint-size jar: mayonnaise, vinegar, milk, salt and pepper. Cover tightly and shake until well blended. Add sauce to potato mixture; mix well; cover; refrigerate overnight. Turn out onto a bed of lettuce. Garnish with paprika. This recipe can easily be multiplied or divided.
