This is THE yummiest, easiest recipe. It is great in summer salads.
Red Onion Salad Dressing
1/2 red onion, coarsley chopped
1/3 cup sugar
1/4 cup white wine vinegar
1/2 teaspoon dry mustard
2 tablespoons chopped herbs (you can use rosemary and
parsley if you like)
1/2 cup olive oil
Process ingredients in a blender.
(Makes around 3/4 cup. Can be refrigerated for a few days.)Anyone have any good homemade salad dressing recipes?
You could do an herb vinaigrette. Just mix together some red wine vingear, a finely minced shallot, Dijon mustard, and your finely chopped rosemary and parsley in a bowl. Damp a cloth towel and roll it up lengthwise. Shape into a donut and place it on your table or countertop. Place bowl in hole. Slowly pour olive oil so it makes a thin stream into the bowl. Add enough oil to make a vinaigrette with a good consistency. Whisk briskly. Season to taste with salt and pepper. Happy cooking!
