My favorite chicken salad is poached, cooled chicken. I like to shred it, personally. Then, I add sliced almonds, sliced celery, onion and if I'm feeling a bit saucy, some craisins or sliced grapes. Add mayonaise to taste, along with salt, pepper, garlic powder and onion powder. A little lemon juice really hightens the flavor too!Anyone have any good chicken salad recipes?

Chicken Salad with Fruit
1 can (about 12 ounces) pineapple tidbits
1 1/2 to 2 cups diced cooked chicken
1/2 cup thinly sliced celery
1/4 cup raisins
1/2 cup toasted slivered almonds*
2 green onions, sliced
1/3 cup mayonnaise
1/3 cup sour cream
1 teaspoon ground coriander
1/4 teaspoon dry mustard
dash ground allspice
1 small clove garlic, minced
dash cayenne pepper, optional
mixed salad greens or romaine lettuce
Combine chicken, pineapple, celery, raisins, almonds, and onions in a bowl. In another bowl, combine remaining ingredients. Toss dressing with chicken pineapple mixture. Arrange on plates lined with mixed salad greens or romaine lettuce.
Makes 4 luncheon portions.
or there's Mexican Chicken Salad:
INGREDIENTS:
1/4 cup cider vinegar
3 Tbsp. honey
1-1/2 tsp. cumin
1/4 tsp. salt
pepper to taste
1 Tbsp. olive oil
2 whole chicken breasts, skinned, boned, and cut into 2'; strips
1/2 tsp. garlic salt
16 oz. pkg. frozen corn
1 cup chopped plum tomatoes
15 oz. can black beans, rinsed and drained
1 green onions, chopped
1 red bell pepper, chopped
10 oz. pkg. lettuce mix
2 avocados, peeled and chopped
2 cups shredded Monterey Jack cheese
3 cups slightly crushed blue corn tortilla chips
1 cup sour cream
10 oz. jar thick and chunky salsa
PREPARATION:
For dressing, combine vinegar, honey, cumin, salt, and pepper and mix well; set aside.
Heat oil in 12'; skillet. Sprinkle chicken with garlic salt, then saute in pan until no longer pink, about 5 minutes. Combine cooked chicken, corn, tomatoes, black beans, onions, and red peppers in large bowl. Stir in dressing. Chill at least 1 hour. (I prepare it up to this point and chill until the next day.)
When ready to eat, combine chicken mixture with lettuce. Serve along with avocados, cheese, tortilla chips, sour cream and salsa. Each diner garnishes his own salad as desired. Serves 6 to 8

use mayo, walnuts, celery, onion (a bit!) and grapes cut in half and or apple chunks. these things go AMAZINGLY WELL with chicken. dont forget salt and pepper. this salad is always sold out at this one restaurant we go to. yum.
take your basic chicken salad recipe and add a little curry powder,walnuts and dried cherries. youll be amazed at the taste.

I have my own basic recipes. For a cold salad: I use mayo (more flavor than Miracle Whip), add eggs, (My daughter's boyfriend who is picking liked this), small chopped onion, celery (if you like), and salt and pepper or season salt (if you like).
For a great hot salad: Italian dressing with spagetti, and vegetables (sauted in margarine), garlic, onion, peppers,
celery, carrots--whatever you choose.
chicken. (I use roasted) pull it apart. cut up some grapes (I prefer purple ones) cashews (as many as you want) and then mix as much mayo as you want. Its really good plain or as a chicken salad sandwich.
Just use some nice lettuce, eg rocket and cos, some fresh coriander, on the vine cherry tomatoes - chopped, red salad onions, chop up some bacon fry untill its crispy, add to salad while its still warm with the chicken, simple but delicious.
